Distilled in 2001 and bottled 2020, this is one of 63 bottles, bottled at 53.2% alc./vol from Cask No: 9726065
Duncan Taylor's Notes:
Before Octave maturing
Colour - Pale gold.
Nose - Sea air with a peat fire in the distance, sour cider apples, a little preserved lemon and dried grass.
Palate - Hay, salted butter and aniseed, lean and salty, a little leafy black tea, quite earthy
Finish - Green wet peat and some burnt herbs, slightly resinous, finished with a warming sweetness and a hint of salt.
After Octave Maturing
Colour - Old gold.
Nose - A light whiff of peat, sweet malt, fruity with melon and green fruits, a little milky coffee.
Palate - Baked apple with raisins, butter and cinnamon, soft plumes of peat smoke, coastal, sweet lime juice.
Finish - Long and clean with persistent briny notes, quite earthy and punchy, drier than on the palate with a touch of white pepper.
